Pizza Flats!

The past few days have been super long, and when I got home from the laboratory yesterday, I had pizza on the brain.  Instead of calling up my favorite neighborhood pizza place, Roma Pizza (which I should really remove from my speed dial!), I had a stroke of foodie genius!  A light version of a margherita pizza...using a whole wheat tortilla wrap in place of a pizza crust.  Let me tell you, it was so delicious that I might just eat them all week!  I wish I had thought of these while I was in college, where they would have been a perfect after-party snack.  Drunk pizza is synonymous with college, right?  They also would have been a brilliant idea during my babysitting days, because kids would have tons of fun making these mini personal pizzas!  Without further ado, let me introduce you to Pizza Flats!

To make the pizza, I put a layer of low-fat shredded mozzarella cheese on top of a whole wheat wrap.


Next I layered thinly-sliced, fresh tomatoes on top of the cheese.



I topped it all off with some fresh basil and an extra layer of cheese, and I popped this baby into the oven for 5-10 minutes at 300 degrees, or until the cheese is bubbly and slightly browned.



And you get a pizza flat!


I cut it just like a regular pizza and ate the slices one by one.  I can't wait to come up with more topping ideas.

I love love love coming up with fun food ideas like the pizza flat, especially when it's a healthy alternative to a guilty pleasure.  Whole wheat quesadillas and now pizza flats...who knew the wrap could be so versatile?  They're not just for sandwiches anymore, my friends!
