Lunchtime Turkey, Spinach and Mozzarella Pita

For lunch I was in the mood for a good ole turkey sandwich, but the deli up the street always makes my sandwiches with way too much meat and is usually too salty.  So, I decided to make my own with fresh ingredients!  I got these great whole wheat pitas from Gristedes, and they are perfect little sandwich holsters.


The package says they are perfect for toppings as well, which has given me several new meal ideas for the future!  I also picked up some part-skim mozzarella cheese.  As I have suggested before, low fat cheeses are definitely your best bet when you are trying to make your meals healthier.


How delicious does that look?  I definitely ate a slice (or 3!) before they made it to the sandwich :-).

Once I stopped inhaling the cheese, I stuffed the whole wheat pita with low-salt turkey, cheese, and spinach, with some light Italian dressing drizzled inside.  As you can see, the pita broke, because I was starving and stuffed it with too much stuff for its little body!  I guess you have to sacrifice beauty for the sake of deliciousness sometimes :-)
