Every Monday, my twitter feed blows up with tweets from my favorite magazines and healthy living blogs about recipes for "Meatless Monday." I wondered, what is this mysterious weekly holiday? Turns out, it is part of the Healthy Monday Initiative, which encourages Americans to make healthier eating choices at the beginning of the week. After an unhealthy weekend, it is supposed to remind you to get back into your routine and make healthier choices. (However, if you read my last post, you won't have to make much of a change!)
So, even though you might have missed Monday, you can still follow the Vegan Before Dinnertime rules and eat these delicious, and healthy, meatless recipes the rest of the week!
